GREEK LAMB ROAST WITH PASTA
Greek Lamb Roast with Pasta brings together the Mediterranean flavours with succulent roasted lamb juices over a delicious tomato sauce pasta. I like to serve this dish with a simple Greek salad and or freshly baked bread.
This is one of the easiest boneless lamb roast recipes to make with only a few simple steps. You won’t be disappointed with the ease and taste of this recipe.

HOW LONG TO COOK A LAMB ROAST
The cooking time for Greek Lamb Roast with Pasta in this particular recipe is 40 minutes in total. This is because I have used a boneless lamb roast weighing 800g to reflect the cooking time of the pasta so the pasta wont be over or under cooked.
If you have a larger Greek lamb roast you may need to take the pasta out of the oven and let the lamb cook for longer.
GREEK LAMB ROAST WITH PASTA INGREDIENTS
- MINI ROAST LAMB – lamb needs to be as close to 800g as possible to ensure the lamb and pasta cook at the same time.
- PASTA – I used spiral pasta but penne would work well too.
- DRIED OREGANO – for Greek flavour.
- COCONUT SUGAR – I used coconut sugar as this is the most natural form of sugar, but you can substitute for regular sugar if needed.
- STOCK – you can use any flavour stock you have or the best option would be to use homemade broth. You can find my homemade lamb bone broth here.
- LEMON – adds to the Greek flavours for zestiness.
- PASSATA – store bought Passata is fine.
- HONEY – the lemon and honey work perfectly to give the lamb a sweet and sour flavour. The honey caramelised slightly to give slight crispiness.

Should I cut the string off my roast lamb before cooking?
You should not cut the string off the roast lamb before cooking. It actually holds the lamb in shape and helps cook evenly.
At what temperature should you cook lamb roast?
It depends on how you are cooking your lamb roast. In this recipe, we cook the lamb at 180°C in the oven but if you are slow cooking your lamb roast then the temperature will be lower.
What sides go with roast lamb?
In this recipe, we have used pasta and a side salad but there are many things to pair with roast lamb such as roast vegetables, rice, side salads, couscous and mashed potatoes just to name a few.
What is a popular spice for lamb?
Oregano, rosemary, fresh garlic, lemon zest, black pepper and salt are super popular spices to use with roast lamb.
HOW TO MAKE GREEK LAMB ROAST WITH PASTA
STEP ONE
Preheat oven to 180°C.
Heat oil in a large frypan over medium heat. Season with dried oregano, salt and pepper, then cook, turning, for 5 minutes or until browned. Remove and set aside
STEP TWO
Add the passata, stock and sugar to the pan and bring to the boil. Season to taste.
STEP THREE
Place the pasta into a roasting pan and stir through the tomato mixture.
STEP FOUR
Set a rack over the roasting pan, then place the lamb on the rack. Bake the lamb and pasta for 35 minutes. Remove from oven and baste with honey and lemon. Return to the over to cook for a further 5 minutes or until the lamb juices run clear when pierced with a skewer and the pasta is cooked.

Ingredients
LAMB
- 1 tbs olive oil
- 1 lamb mini roast or half leg (about 800g)
- 2 tsp dried oregano
- juice of one lemon
- 2 tbsp honey, warmed
- 600ml tomato passata
- 750ml stock or broth
- 1 tsp sugar
- 400g pasta
GREEK SALAD
- 2 tomatoes, chopped
- 1 medium cucumber, chopped
- 1/2 cup marinated feta
- 1 red onion, thinly sliced
- 2 cups mixed lettuce leaves
- 1 lemon
Instructions
Preheat oven to 180°C
Mix honey and lemon together and set aside.
Heat oil in a large fry pan over medium hear. Season the lamb with dried oregano, salt and pepper, then add to the pan to cook for 5 minutes, turning, until browned. Remove and set aside.
Add the passata, stock and sugar to the pan and bring to the boil. Season to taste.
Place the pasta into a roasting pan and stir through the tomato mixture.
Set a rack over the roasting pan, then place the lamb on the rack. Bake the lamb and pasta for 35 minutes.
Baste with honey and lemon and return to the oven for a further 5 minutes or until the lamb juices run clear when pierced with a skewer and the pasta is cooked.
Set the lamb in a warm place to rest for 10 minutes.
Combine Greek salad ingredients in a bowl, drizzle over some oil from the marinated feta and a squeeze of lemon. Season to taste.
Slice the lamb and serve with pasta and Greek Salad.
Notes
Mini lamb roast needs to be as close to 800g as possible to match cooking time of pasta.
