Gluten Free Tahini Cookies
A nut free version of the popular 3 Ingredient Peanut Butter Cookies. These are definitely a sometimes food, they are high in sugar, but definitely better than store bought cookies. There are just 3 ingredients, no preservatives and are nut free, dairy free and gluten free. So perfect as a treat for those with multiple allergies or intolerances.
These can be ready in less than 15 minutes and store well for up to 5 days in an airtight container in the pantry. This recipe makes 12 medium sized cookies, you could use a teaspoon instead of a tablespoon to scoop out smaller portions. I have just been breaking them in half and only putting half into my kid’s lunchboxes as they are quite sweet.
These are great to go in lunchboxes or for an after school snack before sport. They are usually made with peanut butter but for a nut free version I replaced it with tahini.

Ingredients
- 1 cup tahini
- 1 cup raw sugar
- 1 egg
Instructions
Pre heat oven to 190°C.
Place everything into a food processor and blitz until well combined. Use a tablespoon to scoop into small balls and flatten slightly with a fork.
Bake until golden and crispy around the edges, about 9 minutes. Leave to cool on tray for 5 minutes then transfer to a wire rack.
Notes
Raw sugar makes these cookies really crispy. Choosing Rapadura or brown sugar will most likely make soft, chewy cookies.
