Thin, light and perfect for filling with your favourite toppings: this delicious dairy free crepes and gluten free crepes recipe is really easy to make with minimal ingredients. They will become a family favourite breakfast for sure! Whether its a weekend breakfast or a filling before school weekday breakfast.
Great gf crepes without milk are all about getting the batter right. I like to make these in my Thermomix, meaning no lumps, no tearing when you flip and just 10 seconds of blitzing.
Dairy Free Crepes
GF Crepes are just as easy as making pancakes, if you get the batter right. Too thin and the crepes will tear or fall apart when you flip them. Too thick and the batter is difficult to swirl around the pan. The wrong ratio of ingredients and they can turn out rubbery rather than light and soft.
You also need a smooth batter, this recipe’s main flour is tapioca, which is naturally very light and soft, helping with getting a smooth batter.
This recipe is fool proof and once blitzed in a Thermomix or blender, will give perfect crepes every time!
Dairy Free Crepes Ingredients
This crepes without milk recipe for gf crepes is exactly the same one I use for making Gluten Free Tortillas. I originally found the recipe to make gluten free tacos and just added sweet toppings.
To make these gf crepes you will need;
- Eggs – organic or backyard if possible. If you cant have eggs, a good replacement option is 2 tablespoons chia seeds and 5 tablespoons water, mixed together for 5 minutes. This is for each egg.
- Coconut milk – you can use any milk of choice here although I do think the fatness in the coconut milk helps with the consistency of this batter, so I sometimes use half coconut milk half almond milk. The crepes are also dairy free.
- Tapioca flour – this can also be labelled as Tapioca Starch, they are the same thing.
- Coconut flour – you can buy made or make your own using dried coconut flakes, here are some tips here Make your Own Coconut Milk (and flour)
- Olive oil – you can use melted coconut oil.
- Salt – any salt is fine, I prefer to use Himalayan Salt.
Best Toppings for Crepes
We love all of these toppings for our crepes;
- Maple syrup and butter – make sure you get genuine maple syrup and not a flavouring. Genuine maple syrup is a great natural sweetener. Organic butter is also best.
- Strawberry jam – try this great sugar free jam recipe here.
- Vanilla yoghurt – just a dollop on each pancake is perfect.
- Sliced banana – sliced banana along with a little maple syrup.
- Homemade Nutella – try this recipe by Recipe Tin Eats here.
- Fresh strawberries and cream – whipped cream with strawberries is my daughters favourite.
How to make perfect crepes:
- Mix batter – blend batter ingredients in a Thermomix or blender until smooth, you should only need about 10 seconds.
- Heat pan – heat a crepe pan over medium/high heat. Crepe pans work best as they are completely flat all over, allowing the batter to spread thinly and evenly.
- Add batter – add a little butter and then ⅓ cup of batter and swirl to spread.
- Cook – cook the first side for 1-2 minutes or until there are golden brown patches, flip and cook the other side for minute.
- Serve – slide out of pan and repeat with remaining batter, then top with your favourite toppings.
