This Frozen Mango Yoghurt Bark tastes amazing!  Just 3 ingredients……. mix and freeze!  Creamy natural yoghurt drizzled in vanilla and sprinkled with mango pieces, frozen into a delicious and really healthy snack.

Frozen Mango Yoghurt Bark

My 3 year old was watching a cooking show on TV with me and suddenly started laughing, I looked at him confused and he says “Sesame oil!  Ha Ha that’s funny, that oil must come from Sesame Street!” ……. hilarious!

We love mangoes in this house, if only they were in season all year.  Mangos are a great source of vitamins A, C, E, and B-complex as well as health promoting flavonoids such as beta-carotene and alpha-carotene. In some places they are also eaten at night as they are thought to help prevent insomnia and give a better nights sleep.  (definitely worth trying with those little ones who like to get up in the middle of the night!)  Some of our other favourite mango recipes are;

Frozen Mango Yoghurt Bark

Description

Creamy natural yoghurt drizzled in vanilla and sprinkled with mango pieces, frozen into a delicious snack.


Ingredients

Scale
  • 500ml natural yoghurt
  • 1 tablespoon vanilla extract
  • 1 cup frozen mango pieces, sliced quite small

Instructions

Cover a tray (aprox 35cm x 25cm) with plastic wrap or baking paper, pour in the yoghurt, drizzle with vanilla and scatter the mango pieces.  Put in freezer to set (aprox 6 hours).

Cut into pieces and enjoy!

Notes

You could replace the mango with any frozen fruit, raspberries, blueberries etc
