English Muffin Pizzas are a super quick and easy lunch or dinner that your kids will love……  with a heap of hidden veggies in the sauce!

English Muffin Pizzas

Not sure if you even call these cooking?  They were the first thing I remember learning to make in cooking class at high school.  Hopefully I have improved on them slightly.  They are still that easy, you can teach a class of teenagers how to make them.  My secret now is to add a heap of veggies to my home made pizza sauce and then top with foods my kids actually love to eat.

These are a perfect option for a lazy Friday night dinner or to use up a few leftovers in the fridge.  Just make a big batch of pizza sauce and freeze in portions for whenever it’s needed.

Ingredients

Pizza Sauce:

  • 1kg tomatoes
  • 2 garlic cloves
  • 1/2 brown onion
  • 1 small zucchini
  • 1/2 red capsicum
  • 1 carrot
  • 40g olive oil
  • 4 tbsp tomato paste
  • 1 tsp dried thyme
  • salt & pepper

English Muffin Pizzas:

  • 2 English Muffins, split in two
  • 4 tbsp of home made pizza sauce
  • 1 cup grated cheese
  • 6 cherry tomatoes, cut in half
  • 1/2 red capsicum, diced
  • 1 cup ham, shredded
  • 1/2 cup fresh basil

Instructions

PIZZA SAUCE:

THERMOMIX METHOD

Place all ingredients into mixing bowl and blend 30 sec / speed 10.  Scrape down sides of bowl.

Cook 30 min / Varoma / speed 1 with MC removed and TM basket on mixing bowl lid.

Check the consistency of your sauce and for a thicker sauce cook a further 30 min / Varoma / speed 1 with MC removed and TM basket on mixing bowl lid.  If you choose to cook this extra 30 mins just regularly check your sauce to make sure the base isn’t burning.  (the juiciness of your tomatoes will affect how thick your sauce gets)

NON THERMOMIX METHOD

Use a food processor to blitz all the ingredients, you may need to do in batches.  

Place into a large pot on the stove and simmer gently with a lid on for up to 90 mins, stirring every 10 mins or so and checking consistency.  


PIZZAS:

Pre heat oven to 190°C.

Place muffins on a baking tray, top with pizza sauce, cheese, tomatoes, capsicum and ham.

Bake for 10 mins or until cheese has melted.

Serve topped with fresh basil.

Notes

This can be frozen in portions for up to 3 months.

For really fussy eaters add a squeeze of tomato sauce (ketchup) and they will be asking for seconds!
