Fried Rice is probably one of the easiest dinners you can make; ready in 15 minutes and you can load it up with your kid’s favourite veggies.
Easy Fried Rice Recipe
Fried rice is best made with cooked rice that has been chilled overnight or frozen. This allows the grains to dry out to give the perfect texture and it also makes it a resistent starch which can then act as a prebiotic and aid in gut health. You can use any leftover rice; long grain, basmati, short grain or brown rice.
To make this dinner even easier, I used frozen diced veggies, to reduce my veggie chopping time. I also like to dice up my bacon when I buy it and then portion out and freeze, ready for dinners like this and of course pizza night!
This recipe works perfectly as a side, or as for my kids, a whole meal, I just added a little sliced cucumber on the side. You could make it into more of a meal by adding in some leftover roast chicken or cooked prawns.

Fried Rice

Ingredients
- 2 tablespoons oil
- 2 garlic cloves, finely diced
- ½ onion, finely diced
- 100g bacon, diced
- 1½ cups diced frozen vegetables
- 3 cups cooked and cooled rice
- 2 eggs, lightly whisked
- spring onion to garnish
SAUCE
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon mirin
- ½ teaspoon sesame oil
- pinch white pepper
Instructions
Heat 1½ tablespoons oil in a wok over high heat. Add the onion, garlic and bacon. Cook until bacon starts to golden, about 2-3 minutes.
Add vegetables and cook for 2 minutes to defrost and the liquid to evaporate.
Add the rice and sauce, cook for 2 minutes while stirring.
Push the rice to the side of the wok, add the remaining oil and pour in the egg. Cook through like scrambled eggs.
Remove from heat and serve garnished with thinly sliced spring onion.
Notes
The rice needs to have been cooked at least a day ahead and cooled in the fridge or freezer. This allows the grains to dry out, perfect for fried rice.
