STEP 1
Sift flour into bowl.
STEP 2
Add egg.
STEP 3
Add butter.
STEP 4
Mix to combine.
STEP 5
Form into small balls.
STEP 6
Roll in coconut, place on tray, flatten slightly and bake 10-12 mins.
Crunchy Coconut Cookies
These aren’t at all healthy, but easy, delicious and made with only 5 ingredients you probably already have in your fridge and pantry. These are so easy to make, my 4 year old daughter made them today.
These cookies are sweet and crunchy with a subtle coconut flavour. They will definitely be a household favourite.

Crunchy Coconut Cookies

A simple yet classic Crunchy Coconut Cookie. Perfect as an afternoon snack or sweet treat in their lunchbox. Made with just 5 everyday ingredients.
Ingredients
- 110g butter
- 1 egg
- 1¼ cups spelt plain flour
- 1 cup sugar
- desiccated coconut for rolling in
Instructions
Pre heat oven to 160°C. (fan forced)
Melt butter. Sift flour into bowl, add sugar, make a well and add egg and butter, mix to combine.
Form into small balls, roll in coconut and place on a tray lined with baking paper. Flatten balls slightly and allow room for spreading.
Bake 10-12 minutes. Once cooked, loosen but allow to cool on tray.

- Cook Time: 12 minutes
WHERE TO BUY ORGANIC COCONUT;
Where possible it is best buying organic desiccated coconut to avoid any possible chemical refining or bleaching. I get mine from South West Provisions.
