Description
Crumbed Chicken recipe, oven baked and gluten free. Crunch chicken schnitzel with a gluten free crumb. Possible the easiest way to crumb chicken!
Ingredients
CRUMB
- ½ cup rice bread crumbs
- ½ cup almonds, finely chopped
- ½ cup hemp seeds
- 1 garlic clove, finely chopped
- 1 tablespoon olive oil
- salt & pepper
TO COOK
- 2 chicken breasts
- 2 tablespoons mayonnaise
Instructions
Pre heat oven to 220C (200C fan forced).
CRUMB
In a bowl combine the crumb ingredients and mix well.
TO COOK
Place the chicken breast onto a large sheet of baking paper, cover and pound with a rolling pin to flatten out to about 2cm thick. Leave on baking paper and place onto baking tray. Spread mayonnaise over both pieces of chicken, top with crumb and press down slightly.
Bake until crust is golden and chicken cooked through, 12-15 minutes.
Notes
To check chicken is fully cooked, slice and once it is no longer pick it is cooked.
