These are great as part of a kid-friendly dinner or for lunch, served simply with steamed rice and avocado. You could also use these nuggets in fish tacos.
CRISPY SALMON BITES
These crispy bites are so easy to make, they are a great recipe to get the kids helping in the kitchen. They are made with just three ingredients, which can still be swapped out if needed, ie to be gluten free.
Good quality, fresh salmon is an excellent source of protein and various other nutrients, try and use the best quality salmon you can get your hands on. Salmon is one of the most nutrient dense foods you can feed your family, it is loaded with; omega-3 fatty acids, b vitamins, potassium and selenium.
CRISPY SALMON BITES INGREDIENTS
- Skinless Salmon – get the best quality salmon you can, either buy without the skin or remove before cutting in to pieces. You can substitute out for white fish if you prefer. Some examples could be Whiting, Snapper or Dhufish.
- Mayonnaise – any mayonnaise will work, even Homemade Mayonnaise works. You can swap this for full fat yoghurt for another option.
- Panko Breadcrumbs – you can use any breadcrumbs, including homemade, or for a gluten free option you can replace with almond meal.

What is best to serve with crispy salmon bites?
These are perfect served with steamed rice and avocado, or you can serve with veggie sticks and a dip. Serve as fish tacos in soft taco shells or simply with an Asian style slaw salad.
Do I need to use Panko breadcrumbs?
No, you can use any type of breadcrumbs you have at home. I prefer to use Panko for most of my recipes.
Can I use salmon with skin on?
You can but I would suggest cutting the skin off as I find these cook better skin off.
Can I cook these on a pan?
You can for sure but I think they come out best when cooked in the air fryer or oven.
HOW TO MAKE CRISPY SALMON BITES
STEP 1
Cut the salmon into bite sized cubes and place into a bowl.
STEP 2
Coat the salmon in mayonnaise and toss until all pieces are well covered.
STEP 3
Coat the salmon pieces in the bread crumbs until they are well covered.
STEP 4
Spread bites out on baking tray lined with baking paper, so that they aren’t touching. Bake in 220C degree oven for 12-15 minutes until cooked through. You can also bake in the air fryer set to 180C for 10 minutes until cooked.

If you want extra golden nuggets, you can toast the breadcrumbs for a few minutes in the oven on their own, then coat onto the salmon. Just spread the crumbs on baking paper and keep an eye on them in the oven as they can burn quite quickly.

Ingredients
- 450g Skinless Salmon
- ½ cup Mayonnaise or Yoghurt
- 1 cup Panko Breadcrumbs or Almond Meal
- Steamed Rice to serve
- Avocado to serve
- Lemon Wedge to serve
Instructions
OVEN BAKED METHOD
Pre heat oven to 200C fan forced.
Cut the salmon into bite sized pieces.
Place salmon in a bowl and coat with the mayonnaise, toss the pieces around so they are all covered. Toss the pieces through the breadcrumbs to cover.
Line a baking tray with baking paper and place salmon on tray spread out and not touching each other.
Bake for 13 minutes until salmon is cooked through.
Serve with steamed rice, sliced avocado and lemon wedge.
AIR FRYER METHOD
Pre heat oven to 180C fan forced.
Cut the salmon into bite sized pieces.
Place salmon in a bowl and coat with the mayonnaise, toss the pieces around so they are all covered. Toss the pieces through the breadcrumbs to cover.
Spray air fryer with olive oil and place salmon in the basket not touching each other.
Bake for 10 minutes until salmon is cooked through.
Serve with steamed rice, sliced avocado and lemon wedge.
