Oven baked chicken wings with my favourite hoisin peanut marinade. Perfect served with rice and a crunchy coleslaw!
Chicken Wings with Hoisin Peanut Marinade
So this week we are planning Georgia’s 4th birthday party. She was pretty well decided on what she wanted. A party at Simmo’s Ice Creamery with a bouncy castle, a lot easier than our usual parties at home. Locking in a bouncy castle down south seemed to be my biggest hurdle, anyway, three companies later and we have one. She did have to settle for a Justice League superhero design, but was happy as Wonder Woman was on there. Alongside the bouncy castle will be a woodlands themed picnic, thanks to the range of ceramic and grass Easter bunnies that somehow fell into my trolley while I was walking innocently through Kmart. This came about due to there not being any tables near where we will be set up and rather than buying a trestle table, or something similar, I though I would just grab a couple of timber crates from Kmart and make a super simple picnic. Next thing and a trolley load of decorations later (all under $100) we have an amazingly styled woodlands picnic (who was I kidding that I would walk out of Kmart with just a couple of crates……)
These wings are super simple and really delicious, with just a subtle flavour to them.
They stayed moist, whilst getting little crispy, crunchy bits around the edges.
A really simple and cheap midweek meal.
I got over a kilo of good quality chicken wings from my butcher for less than $8! If you paired this up with some rice and a simple coleslaw of cabbage and carrot you could almost do the whole meal for less than $15. If you love this recipe, check out my One Tray Hoisin Peanut Chicken + Rice.
Chicken Wings with Hoisin Peanut Marinade
- Total Time: 40 minutes
- Yield: 4 1x
Description
Ingredients
- 1kg chicken wings
- 1/2 cup peanuts
- 1/2 cup hoisin sauce
- 11/2 tablespoons rice wine vinegar
- fresh chilli, to serve (optional)
- crushed peanuts, to serve (optional)
- fresh mint, to serve (optional)
Instructions
Cut each wing into 3 pieces using a sharp knife and cutting through each joint. Set aside the tips. (use these to make stock/broth).
In a food processor combine the peanuts, hoisin, rice wine vinegar and a splash of warm water. Blitz until smooth.
Place wings in a glass or ceramic bowl and add marinade. Stir to coat each piece. Cover and marinate for 1 hour.
Pre heat oven to 200°C.
Place wings in a single layer on a baking tray and bake for 40 minutes, turning after 20 minutes. Keep an eye on them as you may need to rotate your baking tray around to ensure they all cook evenly. (my oven has a hot spot at the front)
Once all wings are cooked, serve sprinkled with chilli, crushed peanuts and fresh mint.
Notes
You could marinate these overnight.
