Chicken Sushi Ingredients
Sushi Rice – see tips below on cooking sushi rice.
Nori Sheets – made from seaweed and bought from most supermarkets.
Chicken Schnitzel – store bought gluten free chicken schnitzels are the easiest. If you want to make your own, here is a great recipe from Recipetin Eats Schnitzel.
Lettuce – I prefer Cos Lettuce, but you could use Iceberg or even cabbage.
Kewpie Mayonnaise – any mayo will do and you could even make your own, here is my recipe – Homemade Mayonnaise.
Tonkatsu Sauce – this is optional, it’s traditional served with Japanese Chicken Katsu. You can buy from most supermarkets, or make your own using a recipe like this one.
How to make Sushi Rice
Sushi Rice is a short grain white rice labelled as ‘Sushi Rice’ on the packets, that is kind of sticky, making it easy to roll into sushi.
A vinegar, sugar and salt Sushi Rice Seasoning is poured over the cooked rice while hot so it absorbs the flavour as it cools. You can cook your rice in rice cooker, Thermomix or using this method with a saucepan;
- Soak and rinse 2 cups of sushi rice, then drain.
- Place rice and 2½ cups water into a large saucepan over medium high heat without the lid on.
- As soon as it comes to a boil, lower heat to medium low, place on lid and leave for 18-20 minutes or until water is completely absorbed. Do not remove the lid or stir the rice in this time.
- Remove from heat, leave the lid on and let sit undisturbed for a further 15 minutes.
- Combine ¼ cup rice vinegar, 2 tsp sugar, ¼ tsp salt until sugar dissolves.
- Spread rice out into a large bowl or pan and drizzle over half the seasoning. Use a wooden spoon or spatula to gently fold over the rice to mix the seasoning through.
- After 1 minute of mixing, pour in the remaining seasoning and fold in for another minute. It may look wet but the rice will absorb it.
- Leave rice for about 20 minutes, to cool to room temperature.
HOW TO ROLL SUSHI WITHOUT A MAT
You can use a tea towel to roll your sushi if you don’t have a bamboo mat. Because it is so flexible it allows you to shape and roll the rice easily and it makes clean up even easier!
Fold your tea towel in half to make it quite thick, lay a sheet of plastic wrap on the tea towel then place your nori sheet down (rough side up).
Layer your sushi starting with an even, and fairly thin, layer of rice, this is done easily of you wet your fingers to press the rice down. Leave about a 2cm gap at the top. Place your lettuce, schnitzel and mayo about 2cm from the bottom in a horizontal row. Then start rolling, tucking the edge in as you roll over. Wet the top edge of the sushi before sticking down and pressing with it on the base. Place your sushi in the fridge for at least 10 minutes to firm before slicing.

Ingredients
SUSHI RICE
- 2 cups sushi rice, rinsed
- 2½ cups water
SUSHI RICE SEASONING
- ¼ cup rice vinegar
- 2 tsp sugar
- ¼ tsp salt
SUSHI ROLLS
- 3 store bought gluten free chicken schnitzels (cooked as per packet instructions & cooled) sliced into 1cm strips
- 5 nori sheets
- lettuce, finely sliced
- Kewpie mayonnaise
- Tonkatsu Sauce (optional)
Instructions
Place water and rice in a large saucepan without lid over medium high heat.
As soon as it comes to boil, lower heat to medium low, place lid on and leave for 18-20 minutes until water is completely absorbed. Don’t lift the lid or stir the rice in this time.
Remove from heat, leave lid on and sit on bench for 15 minutes undisturbed.
Combine seasoning ingredients until sugar dissolves. Place rice into a large bowl and pour over half the seasoning. Fold gently with a wooden spoon or spatula for 1 minute, then add remaining seasoning and fold another minute.
Leave for 20 minutes to cool to room temperature.
Lay your nori sheet on your bamboo mat rough side up. Spread an even thin layer of rice, leaving a 2cm gap at the top. Wet your fingers to make this easier. Layer your lettuce, strips of schnitzel, mayo and Tonkatsu (if using) in a horizontal row about 2cm from the bottom.
Then roll, whilst tucking in the ingredients and wetting the top edge of the nori sheet to stick it down.
Place in the fridge for 10 minutes to firm before cutting.
