Cheese Quesadillas are like toasted cheese sandwiches made with tortillas, this is the most basic recipe, but you could really add anything you want to these…. Ham, avocado, roast chicken, cream cheese, spring onions, capsicum, coriander.
Cheese Quesadillas
My kids were loving taking toasted cheese sandwiches in their lunchboxes to school, but I found they were eating too much store bought bread when I was making them. These are a really great lighter version and ready in literally seconds. They are a weekly regular in our house now.
I have been testing out these knives from Mck’S Knives and let me just say…they are amazing! You haven’t tried a great knife until you have tried a great knife.

Ingredients
- 4 tortillas
- 11/2 cups grated cheese (cheddar or mozzarella)
- 1 tablespoon butter
Instructions
Lay out two of the tortillas. Divide the grated cheese between them and spread out evenly. Top with the remaining tortillas.
Heat half the butter in a large frypan over medium heat and add one of the quesadillas. Cook for 2 minutes on each side until lightly browned and the cheese has melted.
Remove from pan and cut into 8 triangles. Repeat with the remaining quesadilla.
Notes
You could add other fillings with the cheese like ham, avocado, roast chicken, coriander, cream cheese almost anything really!
