Cauliflower Alfredo Pasta Sauce that’s creamy and delicious and gluten free! You will want to pour this over everything!
Cauliflower Alfredo
Normally bedtime routines are fairly quiet in our house, we plod along at a very slow pace. Mainly initiated by Samurai’s incredibly slow top speed. Dinner can take 45 minutes, bath then another 30 minutes. This is all fine and works well with us, but then there are those days when everyone is tired (well mainly when I am) and everything feels like a battle. I am squawking instructions that no one is listening to. I yell out “Sometimes Samurai I might as well be talking to a brick wall!” Anyway he cracks up thinking I have told the funniest joke he has ever heard. And just like that everyone was laughing and happy again. Kids are great at finding the fun in anything…. even being yelled at.
This sauce first came about as a replacement for Bechamel in my lasagne as a healthier option and to sneak in another veggie. It is now becoming my go to sauce.
This makes for a super easy dinner, even for those who don’t love cauliflower.
Cauliflower Alfredo

Ingredients
- 2 cloves of garlic, peeled
- 20g butter
- 500g cauliflower
- 300g milk
- pinch of salt
- pinch of white pepper
- 250g cream cheese
- 1 packet fettucine pasta
- 1 cup pasta cooking water
Instructions
WHITE SAUCE – THERMOMIX
Place garlic into mixing bowl and chop 3 sec / speed 7. Scrape down sides, add butter and saute 2 min / varoma / speed 1.
Add cauliflower and chop 10 sec / speed 7. Add milk and cook 20 min / 100°C / speed 1.
Add cream cheese, salt and pepper, insert butterfly and mash 20 sec / speed 3 or until smooth and creamy.
WHITE SAUCE – NON THERMOMIX
Chop garlic finely and saute in a little butter in a large fry pan over low heat until translucent. Remove and set aside.
Place cauliflower into a saucepan with the milk and simmer gently for 7-10 minutes until tender.
Using a slotted spoon place cauliflower into a blender along with 1-2 cups of the liquid, the garlic, cream cheese, salt and pepper. Blend until the sauce is very smooth, adding more cooking liquid if needed. You may need to do this in batches if your blender is not large enough.
PASTA
Cook pasta as per packet instructions.
Pour sauce into a frypan over medium heat to warm through.
Add pasta along with 1 cup of the pasta cooking water and toss well to coat fettucine.
Serve straight away!
Notes
Pasta sauce will thicken as it cools, you can add pouring cream to thin sauce out if you like.
