Description
Blueberry and Coconut Popsicles, made dairy free with just coconut ice cream, frozen blueberries and a splash of coconut milk.
Ingredients

- 1 cup Weiss Coconut Ice Cream
- 1/4 cup coconut milk
- 1 cup frozen blueberries
Instructions
In a blender, food processor or Thermomix, blitz together the ice cream and coconut milk, then set aside. Rinse out blender and add the blueberries and blitz until smooth, if needed add a splash of water.
Layer the mixture into your popsicle moulds and place in freezer to set, about 3 hours.
Notes
You could replace the ice cream with coconut yoghurt.
