Perfect for Summer time, Blueberry and Coconut Popsicles, made dairy free with just coconut ice cream, frozen blueberries and a splash of coconut milk.

Blueberry and Coconut Popsicles

These are a really easy Summer time treat for kids, perfect for weekends or after school.  To keep it really simple I used store bought Weiss coconut ice cream, and just added frozen blueberries and coconut milk.  You are probably thinking why not just give them a snack of coconut ice cream?  I figure at least this way by adding the blueberries and coconut milk, you are still getting the sweetness of the ice cream, but the sugar content is slightly reduced.  I wouldn’t call these a healthy snack, but they are healthier than others.

You could also make these with any leftover smoothies, like my Dairy Free Blueberry Smoothies with Hidden Greens.

I am loving this Weiss dairy free Coconut Ice Cream at the moment, but you could replace the ice cream with yoghurt if you wanted.

Blueberry and Coconut Popsicles

Description

Blueberry and Coconut Popsicles, made dairy free with just coconut ice cream, frozen blueberries and a splash of coconut milk.


Ingredients

Scale
  • 1 cup Weiss Coconut Ice Cream
  • 1/4 cup coconut milk
  • 1 cup frozen blueberries

Instructions

In a blender, food processor or Thermomix, blitz together the ice cream and coconut milk, then set aside.  Rinse out blender and add the blueberries and blitz until smooth, if needed add a splash of water.

Layer the mixture into your popsicle moulds and place in freezer to set, about 3 hours.

Notes

You could replace the ice cream with coconut yoghurt.
