Description
Baked Sweet Potato Mac and Cheese is a classic mac and cheese with a creamy, sweet potato sauce. A great way to sneak some veggies into your kids cheesy, pasta dinner.
Ingredients
- 200g macaroni pasta
- 1 tablespoon butter
- 2/3 cup / 40g panko breadcrumbs
- 2 tablespoons butter
- pinch of salt
- 400g sweet potato puree (about half a large potato)
- 1 cup pouring cream
- 1 tablespoon tomato paste
- 2 tablespoons olive oil
- squeeze of lemon juice
- pinch of salt
- 2 cups mozzarella cheese, grated
Instructions
Cook pasta as per packet instructions, less 1 minute of cooking time. Drain, return pasta to saucepan and stir through 1 tablespoon of butter, then set aside to cool.
Place the breadcrumbs, 2 tablespoons of butter and pinch of salt into a bowl and combine using your fingers.
Pre heat oven to 180°C.
In a saucepan over medium heat, bring the cream and sweet potato to a gentle simmer for 5 mins, until thickened slightly.
Add the tomato paste, olive oil, lemon, salt and cheese and stir through until well combined. Pour sauce over pasta, stir through then pour into a baking dish. Sprinkle with breadcrumb topping and bake for 25 minutes, or until top is golden.
Serve straight away!
Notes
Adding butter to the cooked pasta and allowing to cool, means the pasta wont soak up as much of the sauce while baking. The butter lines the pasta in a way, and adds to the flavour.
Cheeses are best grated yourself as pre grated cheese have anti sticking agents added to them.
Normal breadcrumbs can replace the panko breadcrumbs, however panko give an extra crunchy topping.
