avocado hummus

Hummus is an easy to make and healthy dip that’s great on toast for breakfast!  Your kid’s will love the avocado flavour.

A day in the life raising a 3 year old boy: “Sam put your pajamas on” “done it Mummy!” “Sam are your clothes still on under your pajamas?” “Oops” …….. note: be specific.

I think this hummus is even more delicious than the traditional flavour.  The avocado gives it an extra creamy texture and goes perfectly on toasted English muffins.

400g tin chickpeas

2 avocados

1 tbsp tahini

½ clove garlic

2 tbsp lemon juice

pistachio nuts, to serve

THERMOMIX METHOD

Drain and rinse chickpeas.  Peel and roughly chop avocado.  Place garlic into mixing bowl and chop 3 sec / speed 7.  Scrape down sides and repeat.  Add avocados, tahini, lemon, salt and pepper and blend 15 sec / speed 7, repeat for a smoother consistency.  To serve, top with a little olive oil and crushed pistachio nuts.

NON THERMOMIX METHOD

Drain and rinse chickpeas.  Roughly chop avocado and garlic.  Place chickpeas, avocado, tahini, garlic, lemon, salt and pepper into a food processor and pulse until smooth.  To serve, top with a little olive oil and crushed pistachio nuts.
