Anzac Biscuits truely are an Australian classic made simply with rolled oats, coconut and golden syrup. They are an easy and budget friendly treat for school lunchboxes.

- 1 cup rolled oats
- 1 cup plain flour
- 1 cup rapadura sugar
- ¾ cup desiccated coconut
- 110g butter, roughly chopped
- 1 tablespoon golden syrup
- 1½ teaspoon bicarb soda
- 2 tablespoons boiling water
Instructions
Preheat oven to 140°C (fan forced)
Combine oats, flour, sugar and coconut in a large bowl.
Melt butter and golden syrup over low heat.
Mix bicarb soda and water, add to melted butter, give a quick stir and mix into dry ingredients.
Spoon tablespoon sized balls onto a lined baking tray, allow room for spreading. Bake 20 minutes, then cool on tray. Loosen cookies while they are cooling on tray.
