Tomato Pasta Sauce
We have a few big expenses coming up, so I am trying to tighten up on our grocery bill and finding adding a few vegetarian dinners in each week really helps. My kids seem to prefer simple dishes without too many ingredients (this also helps when budgeting) and this pasta sauce is perfect for that. We have even started growing our own cherry tomatoes out the back, they grow really easily! Well easier than all the other plants we have managed to not keep alive.
If you don’t have cherry tomatoes, you can use regular tomatoes, just dice and cook in the same way. For a non vegetarian dinner, add some cooked bacon or shredded roast chicken. This also works really well as a pizza sauce.

Tomato Pasta Sauce made with the sweetness of cherry tomatoes and a little richness from sweet smoked paprika. Simple and delicious.
Ingredients
- 75ml olive oil
- 2 garlic cloves, sliced thinly
- 1kg cherry tomatoes
- 1/2 teaspoon caster sugar
- 1/2 teaspoon sweet smoked paprika
- 1/2 teaspoon salt
- 200ml water
- 1/2 cup basil leaves
Instructions
In a large frypan over medium-high heat, add the oil. Once hot add the garlic and fry for 30 seconds to 1 minute, stirring until it caramelises. Carefully add the tomatoes (as they can spit) along with the sugar, paprika, salt and water. Stir for about 3-4 minutes as the sauce bubbles and tomatoes start to break down.
Reduce the heat to low and cook for 1 hour, stirring occasionally. Break the tomatoes with your wooden spoon if needed and remove from heat once sauce has thickened. Stir through basil leaves and serve over freshly cooked pasta.
Notes
This sauce keeps in the fridge for up to 5 days and freezer a month.
Is also great as a pizza sauce.
