This was so much easier than I thought! So few ingredients and very little time in the kitchen. This will be a regular in our house for sure! The kids gave most of it a go and it tasted just like a store bought teriyaki. I turned mine into a kind of deconstructed sushi roll…..
500g chicken thighs, skin on or off
½ cup mirin seasoning
¼ cup soy sauce
1 tbsp sugar
Combine mirin, soy sauce and sugar in a saucepan, stir until the sugar dissolves and bring to the boil. Then simmer gently for 5-10 mins to thicken. Do not over simmer as it could burn or turn to toffee. It will thicken further as it cools. Whilst this is happening brown your chicken thighs in a very hot fry pan with a little oil. Once cooked, slice and drizzle with sauce.
Serve with rice sprinkled with seaweed, avocado, pickled ginger and cucumber ribbons.
