Pre heat oven to 180°C.
Cut potato into chips.
Place chips into a bowl and toss well with olive oil and turmeric.
Spread out on a lined baking tray and bake for 40-50 minutes until crispy, turning halfway.
Place the coriander into a food processor and pulse a few times to break up the leaves. Add the remaining ingredients and blend until smooth.
Your chips may take longer to cook if they are cut quite large.
