“Mummy come play with me!” usually gets a response of “in a minute” or “just let me finish this” until I read an article written by a successful businesswoman trying to find a family/work life balance. She said her turning point was one day her son said “Mummy come play with me” and she did and after 15 minutes he moved on to something else. Even the busiest person can spare 15 minutes, so I have decided that I will say “yes” when my kids ask me to play with them and give them my undivided attention.
Both my kids love crackers and they are an easy snack to take in the car so I usually have packets of rice crackers in the pantry. I hate buying them though, I feel as though I am feeding them a nutrition less snack. These homemade crackers are packed full of goodness and just as easy to take in the car. They are also super quick and easy to make…. perfect!
The Chia seeds used in these crackers provide my little ones with calcium, omega 3, protein, anti oxidants and fibre, making them the perfect snack! You can pretty much use any seeds you like and even add dried fruit or spices, as long as a third of the seed mix is chia, flax or linseed. Here is my version;
⅓ cup chia seeds mixed with flax meal
⅔ cup mix of pepitas and sunflower seeds
½ tsp turmeric
1 cup water
Pre heat oven to 150°C. Combine all ingredients and allow to sit for 15 mins to form a dough. Spread very thinly with a spatula over 2 baking trays lined with baking paper. Bake in the oven for 1 hour, turn oven off and leave in oven for another hour. Break into pieces and store in an airtight container. If you prefer you could score the dough into squares before you put into the oven, this way it will break apart into square pieces.
