Who needs a giant silver pear I was thinking as I bought it…….. turns out I do……. Its a fun challenge decorating a lounge that is shared with a couple of toddlers and their toys.
Its the weekend! and weekends are perfect for a relaxed breakfasts of pancakes drizzled in maple syrup, yoghurt and fruit. The ricotta adds calcium and protein to these light and fluffy pancakes. I freeze any extras for easy on the go snacks, if there are any!.
250g / 1 cup ricotta
125ml / ½ cup milk
2 eggs, separated
100g / ⅔ cup plain flour
1 tsp baking powder
Mix together the ricotta, milk and egg yolks until well combined. Stir in the flour, baking powder and salt and gently whisk into a smooth batter. Whisk the egg whites by hand until they become foamy, then fold into the ricotta mixture. Heat some butter or oil in a fry pan over med-high heat and spoon on dessertspoons of batter. Cook pancakes for 1-2 mins on each side until golden.
