Easy spaghetti with prosciutto, pea, broccolini and a squeeze of lemon.
I bought Georgia shampoo and conditioner for the first time and she told me her hair smells so “difficult” now! still getting a grasp on this talking thing …………
So this dinner has been served up to my kids two nights in a row and empty plates have come back both nights! That is really amazing in this household!
This has to be one of the easiest dinners ever, all done in the time it takes the spaghetti to cook!
Prosciutto + Pea Pasta with Lemon
- 400g spaghetti
- 1 red onion
- 1 clove garlic
- 1 cup frozen peas
- 1 bunch broccolini
- 4 slices prosciutto
- 1 lemon
- 1 red chilli (optional)
Finely chop the onion, garlic, broccolini, prosciutto and chilli.
In a large fry pan over med-high heat, add a little oil and the garlic and onion, saute til softened.
While this is happening cook your spaghetti for 8 minutes.
After 6 minutes, add the peas and broccolini to the spaghetti to blanch in the boiling water.
Add the prosciutto and chilli to the fry pan, drain the pasta and add to the fry pan, toss well to combine.
Squeeze over with lemon juice and serve!
If your kids don't eat chilli, leave it out, serve theirs, then stir through the chilli. It does take the dish to another level!
