This is a really fun meal for kids and easy to make. We have an abundance of eggs from the chooks here so love using them wherever I can. You could replace the ham with smoked salmon in these or even exclude the cream cheese.
125g cream cheese
4-6 slices of ham
In a food processor combine the cream cheese and avocado until smooth. Whisk the eggs together with 1 tbsp of water. Heat a large frypan to really hot, pour in half the egg mixture then turn the heat down low, gently cook the omelette until it has set. You should be able to cook the omelette fully on low without having to flip it. Use the rest of the egg mixture to cook a second omelette. Remove omelette from pan and spread a layer of the avocado and cream cheese, then add a layer of ham slices. Roll the omelette into a tube and cut into bite sized pieces.
