We have had a busy week, so I haven’t added any new recipes, just stuck to some easy classics.
Monday – we started this week with another roast, this time slow roast lamb. I love the ease of a roast and both kids love roast veggies, so I know they are going to eat well. We had roast potato, sweet potato, carrot and steamed peas, broccoli and cauliflower.
Tuesday – I used the leftover roast lamb to make lamb biriyani. This is a great budget leftover recipe and both my kids love it.
Wednesday – we just had a really simple tomato pasta.
Thursday – I used up all the leftover tomato pasta with a lamb cutlet for each kid and some steamed broccoli and cauliflower. I went out for dinner for my best friend’s birthday so i just wanted something simple that I knew the kid’s would eat easily. Lamb cutlets are always a winner.
Friday – I have just discovered an amazing fish monger down the road where I picked up the biggest fillet of barramundi I have ever seen. This fish was so fresh I just pan fried to get a crispy skin and then finished off in the oven. Served with a household favourite of sweet potato chips and a really simple salad of cherry tomatoes, cucumber and avocado.
Saturday – freezer meal tonight. Chicken kievs with sweet potato chips again and salad.
Sunday – Teriyaki chicken, I was surprised how easy this was to make myself and so is a regular in our meal plans. Both kids love avocado and cucumber so it’s a stress free dinner for me.
