My no waste meal plan for this week with a recipe for quinoa minestrone that’s great for using up any leftover veggies in your fridge.
This week’s aim is to get in as many veggies as possible, we have all been fighting colds, so I want to fuel us with as much goodness as possible.
Monday – Minestrone made with quinoa and topped with a kale and celery leaf pesto, I will post this recipe this week. It’s great as it’s loaded with a heap of veggies and if you don’t want to stick to vegetarian, perfect made with bacon. I left my soup chunky and put the kid’s through a food processor, then served with macaroni pasta.
Tuesday – we are staying at a friend’s place looking after her kid’s for a couple of days in the holidays, so I get a night off cooking! yay!
Wednesday – lasagne, another meal loaded with vegetables, my recipe uses a cauliflower sauce to replace the standard bechamel.
Thursday – Spaghetti Bolognaise. I like to make a huge pot of sauce when I make my lasagne allowing for leftovers to be used in spag bog the following night and add some single serves in zip lock bags to the freezer for weekend dinners.
Friday – simple grilled fish with coleslaw salad. My minestrone recipe only uses part of the cabbage so this way the rest gets used up this week.
Saturday – freezer meal, we have some fried rice and pulled pork to be used, so it might be pulled pork sliders with a little coleslaw and rice.
Sunday – another new recipe to be posted, paprika chicken fettucine, just a simple chicken pasta dish.
