These are a great, healthy treat for lunchboxes and are both nut and dairy free. I also love making these for my kid’s birthday parties.
Lime + Coconut Gummies
- 2 cups coconut milk
- 1 lime, juiced
- 1 tbsp maple syrup
- 4 tbsp gelatin
Pour half the coconut milk and all the lime juice into a bowl and sprinkle over the gelatin.
Heat the remaining milk in a saucepan and turn off just before it boils.
Add maple syrup to the bowl, then pour over heated milk.
Whisk together until combined well.
Pour into moulds and refrigerate to set, (about 2 hours).
