Pre heat oven 200°C.
Place drumsticks, paprika, salt and pepper into a ziplock bag and shake to coat.
Heat an oven proof pan over med-high heat and add half the butter and the drumsticks, sear until golden brown all over (about 3-4 mins, turning regularly). Remove chicken and set aside.
Add garlic and remaining butter to the pan, cook 1 minute while stirring. Pour in stock, cream, lemon juice, thyme and bring to the boil. Reduce the heat and add spinach and Parmesan and simmer gently for 5 minutes.
Return the chicken to the pan and cook in the oven for 20-25 minutes until cooked through.
