Is there any way to stop a two year old from waking every morning at 5.30? Its getting cooler here so it is still dark when I hear “Mummy!” “Awake!” “Couch!” meaning… “Mummy, I am awake now, come and get me so we can cuddle on the couch” Oh well at least my day gets an early start and I have an extra couple of hours to write recipes like this. All the extra morning time makes me want to plate up beautiful breakfasts like this one……. fairly guilt free, fun and filling for little tummies!
easy pancakes with orange & honey ricotta
1 cup wholemeal plain flour
1 cup milk, almond milk works well
1 tbsp fresh orange juice
1 tbsp honey
½ tsp vanilla extract
handful of raspberries
zested orange rind
Place all ricotta ingredients into a small food processor and blend until light and fluffy, place in the fridge for 30 minutes. Whisk together pancake ingredients and place in the fridge for 30 minutes. Add a little coconut oil or butter into a fry pan over med-high heat and add tablespoons of mixture. Once each pancake starts to bubble, flip over and cook on other side for about 1 minute, until golden. Top each pancake with ricotta, raspberries and orange rind and enjoy!
