This was so much easier than I had thought it would be. I have been meaning to make my own for ages and it’s as simple as grating a beetroot and squeezing. You can use a clean tea towel (wouldn’t recommend a good one) or I cut up an old Enjo wash bag and used a square from that. I was making Coconut Ice for Sam’s school teachers and this worked a treat. Came out the perfect pink first go. This should last up to two weeks in an airtight container in the fridge. Stay tuned and I will road test some other colours.
Grating the beetroot is probably the messiest part, the best trick is to lay your cloth on a large plate and grate straight onto it, then just wrap it up and squeeze into a jar. This was the pink I got from about a teaspoon of the juice, for a darker colour just add more juice.

1 beetroot
Instructions
Wash and scrub your beetroot, no need to peel, just cut one of the rough ends off.
Finely grate over a clean tea towel or muslin cloth laid over a plate.
Wrap up the grated beetroot in your cloth and squeeze the juice into a jar.
Add this juice to colour, the more you add, the darker the pink.
Notes
1 beetroot should make about 3 tablespoons / 45ml of juice.
Store in an airtight container in the fridge.
