An easy porridge filled with the sweetness of sultanas and apricots. A great way to replace those sugary cereals for breakfast.
Its still ugg boots and jumper weather here, but we are getting glimpses of sunshine, just enough to make us look forward to Spring even more. The kids and I managed a bit of scooter riding before the sun disappeared and the rain came back. Now we are all back inside with me hoping for a double nap (both kids asleep at the same time)….fingers crossed.
In the mean time lets talk porridge, I wrote this recipe thinking of friends with little ones who have just started eating, but it turned out to be really delicious so think I will be having it for breakfast from now on. You could add any dried fruit or nuts you like and serve topped with yoghurt and extra maple syrup.
360g almond milk / or milk of choice
15g dried apricots, chopped
1 tbsp maple syrup
1 tsp vanilla extract
½ tsp cinnamon
Place milk into mixing bowl and heat 5 min / 90°C / speed 2. Add all ingredient except for the coucous and mix 20 sec / reverse / speed 1. Add couscous and mix 20 sec / reverse / speed 1. Leave mixture to rest in the mixing bowl with the lid on and mc in place and the warmth will cook the couscous (aprox 15 mins). Fluff with a fork to serve.
NON THERMOMIX METHOD
Place milk in a saucepan over med high heat and heat but don’t allow to boil. Once milk is hot turn off the heat, stir through all ingredients until well combined then cover with a lid and allow to sit for 15 mins. The couscous will cook in the warmth of the milk, fluff with a fork to serve.
