A simple yet classic crunchy coconut cookie. Perfect as an afternoon snack or sweet treat in their lunchbox.
These aren’t at all healthy, but easy and delicious………..
1¼ cups wholemeal self raising flour
1 cup sugar
Desiccated coconut for rolling in
Pre heat oven to 180°C. Melt butter. Sift flour into bowl, add sugar, make a well and add egg and butter, combine well. Form into small balls, roll in coconut and place on a tray lined with baking paper. Flatten balls slightly and allow room for spreading. Bake 15 minutes. Once cooked, loosen but allow to cool on tray.
