My son is a really tricky eater and will quite often not touch pasta or noodles if there are too many ingredients. This recipe is a great way to have a simple dinner that the kids will love eating while still eating vegetables.
buttery yellow squash pasta sauce
250g fettucine, or pasta of choice
4 button yellow squash
2 tbsp butter
2 tbsp grated cheese
Cut the squash into quarters and place into TM basket. Place 500g water into mixing bowl, insert TM basket and cook 10 min / Varoma / speed 2. Remove basket and discard water. Place squash into mixing bowl and puree 20 sec / speed 8, gradually increasing speed from speed 1 to speed 8. Scrape down sides, add butter and repeat until smooth. Cook pasta as per packet directions, stir through squash and serve topped with grated cheese.
NON THERMOMIX METHOD
Cut squash into quarters and cook in a steam basket or boiling water for 10-15 mins until cooked well. Discard any water and place squash into a food processor with the butter and blend until smooth. Cook pasta as per packet directions, stir through squash and serve topped with grated cheese.
