A great way to give baby a puree packed with flavour….. garlic, lemon, chickpeas and the creaminess of avocado.
I thought life was busy, that was until baby started on solids. Suddenly I had to find time in the day to prepare, feed and clean three meals for my 6 month old, in between naps, milk feeds and any outings I was hoping to attempt. Our daily schedule almost needed an excel spreadsheet to reproduce it. Ha ha crazy but oh so enjoyable!
This puree is a great one as there is no cooking required and it is basically avocado hummus, so half can be for Mum to have on toast or with crackers and the rest is dinner for baby…… perfect!
makes 10 serves;
400g tin chickpeas
1 tbsp tahini
½ clove garlic
2 tbsp lemon juice
pistachio nuts, to serve
Drain and rinse chickpeas. Peel and roughly chop avocado. Place garlic into mixing bowl and chop 3 sec / speed 7. Scrape down sides and repeat. Add avocados, tahini, lemon, salt and pepper and blend 15 sec / speed 7, scrape down sides and repeat.
NON THERMOMIX METHOD
Drain and rinse chickpeas. Roughly chop avocado and garlic. Place chickpeas, avocado, tahini, garlic, lemon, salt and pepper into a food processor and pulse until smooth.
