Apple + chia muffins perfect for breakfast or an after school snack!
We had them drizzled in yoghurt and honey…… so yummy!
Moving in to a new house is so exciting, setting up all the rooms and especially love buying new furniture. I bought a beautiful dining table from a homewares store down the road, Empire, which has amazing furniture……… very dangerous having this store so close to my house, feel like I should introduce myself I will be in there so often. Anyway, I couldn’t decide what to put on it and spent day after day swapping and switching, from fresh flowers, to natural bush stick arrangements (branches picked from the backyard), finally decided on a bowl full of green apples (inspired by many years of watching The Block). Which means we are now on a daily green apple eating rotation to keep the bowl full and fresh. You will probably be seeing a heap of green apple recipes from now on…. starting with this one!
I made the healthier version of these so they aren’t overly sweet, the kids loved adding the yoghurt and honey for sweetness.
apple + chia muffins
1 cup wholemeal self raising flour
1 tsp cinnamon
2 tbsp chia seeds
1 cup almond meal
1 egg white
¼ cup olive oil
¼ cup rice malt syrup
1 cup milk
1 apple, grated
Pre heat oven to 190°C.
In a large bowl sift together the flour and cinnamon. Stir in the chia seeds and almond meal.
In another bowl, whisk the egg white with the olive oil, rice malt syrup and milk. Then stir through the apple.
Fold the liquid ingredients into the dry ingredients until just combined.
Divide mixture into 12 large greased muffin tins and bake 25 mins until golden brown.
Allow to cool slightly in the muffin tray then on a wire rack.
