Dinner in less than 10 minutes!……… and its creamy and lemony and has the goodness of salmon.
I think this has been the perfect time in my life for me to have kids, except……… Oprah is no longer on at midday!! So disappointed! My best friend and I are huge fans and would so love to be sitting down at opposite sides of the country at the same time watching Oprah at midday……. Oprah taught me eating salmon 2-3 times per week will reduce wrinkles, no need to tell me that twice!
Here is a recipe for more wrinkle free years!
angel hair pasta with creamy salmon sauce
500g angel hair pasta
150g skinless salmon fillet, sliced thinly
2 lemons, zested and juiced
½ bunch parsley
Heat some salted water in a saucepan ready for the pasta. Add the butter to a fry pan over medium heat and as it starts to melt add the lemon zest and cook for 2 minutes, stirring regularly. Pour the whiskey into the pan and cook a further 2 minutes while stirring, this will cook off the alcohol. Add the angel hair pasta to the boiling water and cook as per packet for 3 minutes. Reduce the heat on the fry pan and pour in the cream, increase the heat a little until sauce begins to simmer and then add the salmon. Turn off the heat and place on lid allowing the salmon to cook in the sauce. Strain pasta and add to fry pan along with some lemon juice to taste. Serve sprinkled with parsley
